Boiled plantains with a spinach sauce.
This month of May has been fitness month for me and a few others according to my twitter and instagram feeds. I am watching what I eat very closely and trying to eat as healthy as I can. I made up this recipe last week and posted the picture on instagram and by Facebook page. It got so many requests for recipes and likes that I decided to share. Hope you enjoy! |Boiled plantains with spinach sauce|
1 large tomato Diced
1 large onion diced
1 large red bell pepper
1 cup spinach. Diced.
1 scotch bonnet pepper
1 Maggi/knorr cube
1/2 teaspoon curry
2 table spoons olive oil
Salt to taste
1 cup water
Pinch of salt
In a pan add the olive oil and wait till it is hot.
Add the onions and sauté on low heat until it is see through.
Add the tomatoes and peppers (scotch and bell)
Add the Maggi, pinch of curry, and salt
Add the spinach and taste. Add more salt of needed.
In a pot boil water till it is boiling over. Peel plantains and cut in half. Bo for 10 mins or until a fork goes through easily.
Serve together. This meals serves 2.
