Healthy Lohi : Lettuce wraps

If you have been reading this blog for a while you know I am on a perpetual “diet” I really don’t call it a diet because when i crave something I eat it. I cook often for this blog as well as my numerous “food writing” jobs so its not weird to catch me eating “unhealthy” food somewhat often. I have however gained so much weight in the past six months (at least that is how I feel) that I am now taking my “dieting” so seriously! I also started a cycling class downstairs of my apartment and I am doing p90x (trying to) and just trying to be as healthy as I can! SIgh!

The good news is I actually get A LOT of requests for healthy recipes and I have decided to start a series called “Healthy Lohi” I will be showcasing recipes I create as well as recipes I try that are easy and healthy! For the first installment we have lettuce wraps. I made these when I got home last night. I had had a LONG day and the weather was soooo depressing, I just wanted to quickly eat something and go under my covers and work on my laptop will I went to bed! So I made these! They are SO simple! it took like 20 minutes total. The best part was I was actually full! I find whenever I try to portion control my food I always end up hungry but these filled me up nicely! Try it and let me know.

Lettuce wraps

Serves 1-2
Prep time 10 minutes
Cook time 10 minutes
Total time 20 minutes
Meal type Salad, Snack


  • 4 Large lettuce leaves (washed and chilled)
  • 1lb chicken breast (chopped)
  • 1/2 red/yellow/green bell pepeprs (chopped - you can add any veggies you want really.)
  • 1/2 onion (chopped)
  • 1/2 tablespoon suya pepper
  • 1/2 teaspoon chilli pepper
  • 1 tablespoon soy sauce
  • 1 knorr cube (optional )
  • 2 tablespoons coconut oil


Step 1 In a bowl add the chopped chicken and marinate with suya spice, chilli pepper, soy sauce, and knorr cube. Allow to rest for 15 minutes
Step 2 In a dry pan over medium heat, add coconut oil and allow to get hot. Add the chicken and allow to fry for 5 minutes stirring often to ensure it doesn't get burned.
Step 3 Add the veggies and onions and continue to stir. taste for salt and add if needed. Fry for 5 minutes or until chicken is cooked through. If you cut them small, it should not take more than 10 minutes.
Step 4 put about to two table spoons on some lettuce...roll and eat..

    • haha! I started like 2 weeks ago. with 2 cheat meals a week! I am trying to be as creative as possible! Check back for some stuff..:)

  3. I’ve been on that low carb P since New Years, and last week, I tried a similar wrap (ground chicken filling though) with collard greens as the wrap. #FAIL The collard taste overpowered the whole thing.

    • ohhh collar greens won’t be as tasty because they are a bit bitter! Lettuce works really well! I loved it! I just made one with ground beef patties! i’ll blog it soon!
