Healthy Lohi – Protein Pancakes

Hello lovelies  I hope everyone has had an amazing week! My week was so busy I am trying so hard to reach so many deadlines but with God all things are possible and I am keeping at it! This morning I woke up very early because I had some work to do before noon and had to get to the gym before I started working if not my workout is probably not happening today! I only had yogurt and a banana before going to workout so when I got back home I was so hungry! I have seen these recipe for these protein pancakes floating around the net so I decided to try my hand at it. It is so simple and so delicious! I added some of my fave things to mine, namely banana and cinnamon. I even made a strawberry compote to spread all over it. YUM! .an amazing substitute for something that I love to have on Saturday mornings!  Hope this helps someone out there! Off to do some more work! sigh! it does not end! love it tho!

This recipe is about 152 calories for the pancakes only...which is not bad at all for a healthy breakfast.

Ingredients

  • 3 egg whites
  • 1/4 cup oatmeal
  • 1/3 cup water
  • 1/2 ripe banana
  • 1 scoop protein powder
  • pinch of cinnamon
  • strawberry sauce
  • 1 tablespoon honey (for drizzling)

Directions

Step 1 Mix everything in a blender until it is a creamy smooth mixture. (minus the strawberry syrup obviously)
Step 2 Grease the bottom of a pan with some coconut oil (I use coconut oil alot you can use whatever you like)
Step 3 Add a laddie of the batter into the pan...wait till you see bibbles on one side then, flip over. contiue till batter is done.
Step 4 Serve with strawberry sauce, I made mine by mixing, strawberries, lemon zest, 1 teaspoon stevia (instead of sugar) and boiling on low heat till it feels thick.
Step 5 Plate by stacking strawberries and pancakes alternating then drizzle with 1 tablespoon of honey.
Step 6 Eat your pretty and healthy alternative.
I only ate about half of it and I was full...I saved the rest for later....I think my cup of green tea made me full fast! :)

    What brand of protein powder do you use? Dont think i know about protein powder…well unless its the same as the one for protein shakes!

  6. Ohita oya don’t lie, was this thing really sweet? Me I have sweet tooth o…I cant go and be trying all these to end up tasting funny. It looks good though!

    • LMAO! it actually was no lie. I used banana and cinnamon and those two def give a sweet taste. I promise you it was sweet. Also using honey as the drizzle, made it VERY good too!

  8. Hi Lohi, I’m loving your recipes like crazy. Given my weakness for pancakes and my new scary weight now, I’m desperate to try out this alternative recipe for the same goodness. My problem though is acquiring the protein powder. Unless you’re talking the likes of fish powder, please help a sister out with probably brands for easy identification. I’m in Ghana by the way.

    • you do not have to use the protein powder. I actually stopped adding it to mine because I found it made me have belly aches.
