Healthy Lohi : Cauliflower rice and spinach sauce (efo)

Hello guys!! I hope we all had a very splendid weekend! I am finally able to blog without anger (dear enemies, you need to do better than this to make me stop. I have this guy on my side, His name is God. #kthanksbye) and it feels so good to be back in my good spirits! Thank you to everyone who commented on my last post. You would probably notice you cannot save pictures from here anymore.(whoop whoop! thank you Babse) and my watermark is all over my pictures now -__- These are all small steps to a happier me!

So for today’s post, I have been trying to “eat clean” for the past few weeks and it has been awesome! Trying new recipes. Trying to Nigerian-ize recipes out there that are healthy. It has been fun fun fun! Here is a recipe I came up with last week. The picture received rave reviews on my facebook page (Have you liked it————>) so I decided to blog the recipe. I hope you enjoy it as much as I did. I made enough for two servings and I will definitely make some more cauliflower rice this week to eat with my gizdodo sauce (yummm).

Cook time 40 minutes
Total time 1 hours, 10 minutes

  • 1 cauliflower
  • pinch of salt and pepper
  • 1 sprig fresh rosemary
  • 1 teaspoon olive oil
  • 2 cups spinach (chopped)
  • 1lb chicken (boneless/ skinless (any protein can be substituted))
  • 1/2 bell pepper (diced)
  • 1/2 onion (diced)
  • 1 tomato (diced)
  • 1/2 cup chicken broth
  • 1 teaspoon cray fish
  • 1 bullion cube (knorr. maggi.. etc)
  • dried fish (optional)


Step 1 For the cauliflower rice : Remove the cauliflower from the stalk. break them into small florets.
Step 2 Add the florets to a food processor and blend for 2-3 minutes or until the cauliflower is a smooth-ish consistency.
Step 3 In a pan, add the olive oil, once its hot, add the ground cauliflower and stir. Add salt rosemary,and black pepper and continue to stir until it becomes dry. Serve with stew, efo, stir fry sauce etc.
Step 4 For the Oil free Efo : In a pan, add 1 tablespoon oil, add the diced chicken breasts. Season with salt and pepper and cook on both sides for 4-5 minutes each. Add the diced red pepper, tomato and onions and saute for 3-4 minutes. set aside
Step 5 In a clean pot, Add broth. Allow to come to a boil. Add cray fish, dry pepper, bullion cube and dried fish and allow to boil for 2-3 minutes. Add spinach leaves and cover the pot. Allow to wilt for 5 minutes.
Step 6 Stir the soup together. Then add the cooked chicken with the tomatoes, bell pepper and onions. Taste for salt. Add if needed. Stir together and allow the soup to cook for 5 minutes. All done.

    I’m also on a health kick at the moment but I’m not a fan of cauliflower……..this might change things. I just discovered the wonders of lentils. Do you have a recipe for lentils?

    PS – I made a large portion of spicy cod and stir fried brocolli (with soy sauce and sweet chilli) over the weekend. Delish and healthy

  5. Looks nice. I am vegan and I try to get pas much veg as possible. I don’t like the taste and texture of cauliflower rice but quinoa would be a good alternative or crumbled chickpeas makes for a hearty meal.
