Racks on racks on racks | Summer time BBQ



So it is officially summer time! (well sorta seen as it is still chilly!) One of the most awesome things about summer for me is the time I spend travelling, hanging out with friends at BBQs and cookouts and lounging by some kind of body of water( I love the beach!!!) With BBQ season about to commence, it is only right that I share my awesome BBQ marinade recipe! I just use my fave brand of BBQ sauce and I add some ‘serenre’ to make it pop! This marinade is good on chicken, pork, beef, fish and even vegetables! Whip up a bunch, toss it into the freezer and defrost a few days before each BBQ session and you would have a huge winner among family and friends! I made this recipe when I was in Calgary for Easter with my family a few months ago. I had to send it into http://ynaija.com/magazine/ and I wish my brothers could tell you how fast they ate this! I had to make some more the next day. My mum, dad, my aunt, my brothers, and two cousins. It was hilarious! They where stealing pieces off each other! I could not stop laughing! BBQ ribs

Serves 4-6
Prep time 10 minutes
Cook time 1 hour
Total time 1 hours, 10 minutes

Summer time easy BBQ sauce.


  • 2 tablespoons brown sugar
  • 1 tablespoon mustard
  • 1 tablespoon chilli pepper
  • 1 teaspoon ground black pepper (freshly ground)
  • 1 teaspoon minced garlic
  • 1 cube maggi
  • 1 cup BBQ sauce (Whatever your fave brand.)
  • 1 rib Baby Back Ribs


Step 1
Preheat the oven to 160 degrees Celsius/350 Fahrenheit
Step 2 Mix together the brown sugar, mustard, chili pepper, black pepper, maggi and garlic together in a small bowl. Stir together till it is a paste.
Step 3 Rub the ribs with the seasoning on both sides. Place in a single layer in a large roasting pan and Place the roasting pan into the oven and bake until the ribs are tender, about 1 hour
Step 4 Remove from the oven and rub the ribs with the bbq sauce on both sides. Place back into the oven and grill for 15 minutes. Or place untop of an outside grill and grill till it is a crispy golden brown.
Step 5 Let the racks rest for 5 minutes before cutting into it.

Rosemary corn on the cob

Serves 6
Prep time 5 minutes
Cook time 13 minutes
Total time 18 minutes
Meal type Side Dish, Snack
Occasion Barbecue, Casual Party


  • 6 corn on the cobs (skin and silk removed)
  • 4 tablespoons butter
  • 1 teaspoon brown or white sugar
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon rosemary leaves


Step 1 Boil the corn with water until tender. About 8 minutes.
Step 2 In a sauce pan add butter, when it is melted, add sugar, garlic, salt and rosemary leaves. Allow to simmer. Rub all over the corn and place in the oven to grill for 5 minutes

  3. I love ribs and corn! And I agree that the best meals are those shared with loved ones…I get such joy eating with my family and watching them happily gulp down the meals I cook:)
