Happy Canada day! | Boli and fish
Hello everyone! today is Canada day aka Canada’s independence day and there are a few BBQ’s around town to my knowledge. If you are still looking for what to make, let me advise you to make this boli and fish I made for myself and a friend a few days ago. It tasted soooo good we ended up eating it all that evening even though we where supposed to save some for lunch the next day! Here is my quick recipe for my awesome boli and fish! This can work in a regular oven but tastes better when done on the grill (did it on an outside grill yesterday at a bbq). I hope someone tries it! This meal is an ode to growing up in PortHarcourt in Nigeria! I loved plantain and fish! It is a street snack that they sell in black plastic bags but it tastes soooooo good! it is always one of the first things I try to eat when I get home and I am excited I get to eat it in a few days! WHOOOPPP! In the mean time, make it yourself for such an awesome treat!
1 ripe plantain
1 mackarel fish
1 cup palm oil
1 scotch bonnet
1 red pepper
3 tablespoon palm oil
salt and pepper to taste
Peel the plantain and sprinkle with cooking oil. Place on grill and grill till it is ready on the inside..about 20 minutes. Ensure to turn over often to make sure it does not get burned.
In a bowl, cut the fish into smaller pieces. Place in a bowl and sprinkle with salt and pepper. Allow to marinate for 10 minutes then place on the grill. Grill carefully on all sides for 10 minutes or until fish is cooked on all sides.
In a pot, heat the palm oil. once hot, add diced onion and allow to saute. Place diced tomatoes, scotch bonnet pepper, and red pepper and allow to fry.
Add maggi,salt to your taste and continue to cook until the oil is ontop of the sauce. Serve with the plantain and fish
You could also make this parfait as a way to end your BBQ today! Its simple, pretty and delicious!
