Quinoa Salad

A few days ago I posted the above picture on my instagram page (are you following me on Instagram? follow for many more inspiring food pictures!) and I got a lot of requests for the recipe. I have eaten a quinoa salad at a restaurant not too long ago and I wanted to recreate it when I got home. So I just went with my memory and what resulted was a delicious and filling meal that I have been eating all week! Here is the recipe as requested! I hope you like it if you try it!

Ingredients

  • 2 cups quinoa
  • 1 Large cucumber (diced)
  • 1 broccoli (chopped)
  • 1 red bell pepper (diced)
  • 1 onions (diced)
  • 1lb chicken breast (diced)
  • 2 cups chicken broth
  • 1 scotch bonnet (chopped)
  • salt and pepper to taste
  • 3 tablespoons cooking oil

Directions

Step 1 In a pot, add 3 tablespoons of oil. Add the diced chicken breasts. Add salt, pepper and curry. pan sear for 6 minutes on all sides till the chicken is cooked through.
Step 2 In a clean pot add 3 tablespoons of oil. Add the quinoa and allow it to fry for 4 minutes. Keep stirring until it is completely fried.
Step 3 Add the broth and boil for 15 minutes. Add water if the quinoa needs to be more soft. Allow to dry.
Step 4 Add the vegetables, salt to taste and chicken breasts. Stir and allow to boil for 5 more minutes.
Step 5 Serve hot!
