Scalloped Potatoes

A few weeks ago my friends “bullied” me into making them lunch after church and I needed something I could make really quickly after church but was tasty! I remembered I had not made these in a while and I quickly whipped out my casserole dish and made some scalloped potatoes. I love this recipe because it makes regular potatoes have a different taste and the I love the added cheesiness! My girls liked this so much they where struggling for the last piece! *I wont mention y’all names. hahhaha* Try it and let me know! xx

easy Scalloped potatoes with bacon


  • 2lb potatoes (peeled and cut into 1inch circles)
  • 2 tablespoons butter
  • 1 Large onion
  • 3 thick slices of bacon (cooked till crispy)
  • 1/2 cup Parmesan cheese
  • 2 cups half and half
  • 1 handful Parsley leaves
  • salt and pepper


Step 1
Preheat oven to 350 degrees. . Butter a large pyrex dish with 1 1/2 Tbsp of butter.
Step 2 Layer the bottom of the pyrex dish with 1/3 of the potato slices. Sprinkle with salt and pepper. Layer on 1/2 of the sliced onions and 1/2 cup of the cheese. Layer on 1/2 of the bacon, 1/2 of the parsley and sprinkle with a little more cheese
Step 3 Repeat by layering on 1/3 of the potato slices, sprinkle again with salt and pepper. Layer on the remaining sliced onions, 1/2 cup of the cheese, the remaining bacon, parsley and chives. Sprinkle with more cheese
Step 4 Top the dish with the remaining potato slices. Add the half and half milk. And cover those potatoes with a dot of butter
Step 5 Cover the scalloped potatoes with foil paper and bake in the oven for one hour. After an hour, remove from the oven, remove the foil, sprinkle on the remaining cheese. Return to the oven for an additional 30-40 minutes. When done, the potatoes should be tender, but not mushy, and the liquid should be mostly absorbed.
Step 6 Serve warm.
