Cucumber and Shrimp cups


With the holidays around the corner, some last minute people might still be looking for recipes to wow their guest and for the “fitfam” i might have just the right appetizer with very little guilt factor. You can eat a lot of these and not feel too bad and then sabotage your diet with some cheesecake (hahahaha) I made these after being inspired by one of the food blogs I visit. I unfortunately do not remember which one so I do not have a link. Although she made hers with onions and crabs (i think) I decided to give mine a little bit of a twist and here we are.   • 2 whole cucumbers (cut into think circles)
  • 1 cup shrimps
  • 1/2 teaspoon mayo
  • salt and pepper to taste


Step 1 Cut the cucumbers into thick circles. Using a melon baller or teaspoon, remove the middle seeds but ensure there is still some on the bottom for the shrimp sauce to stay in.
Step 2 in a bowl separate half of the shrimps and chop them into smaller pieces. mix mayonnaise with the chopped shrimps.
Step 3 using a teaspoon. spoon about half a teaspoon into each cucumber cup. place a whole shrimp and top and serve cold.
