Mango Salsa + Jerk Pork Chops

Hello lovers! It has been a while since I posted! I really do miss this part of my job and with more responsibility to actually cook, it gets overwhelming coming back home and having to write out recipes but alas!! Here I am returning back to my first true love and I hope I can create enough time in my new schedule to blog at least twice a week. If you have any specific recipes you want to see and they are not on this blog, please let me know and I would add it, if I can. Also I would be updating older recipes with better instructions and pictures so you can look out for those as well.

No for today’s recipe. I cannot remember exactly where I got this idea from, but I am sure I saw it on one of the numerous blogs I follow. Jerk spice is one of the mostly popular spices associated with Caribbean cooking. It is a mixture of herbs and seeds that results in an amazing mixture of spicy and sweet. Luckily for us, jerk seasoning is sold commercially and can be picked up at almost any grocery/food market. Jerk seasoning works perfectly on any protein and today I used it on pork chops because they work perfectly with my mango salsa. With the weather we have been having these few days, it makes sense to have such a refreshing meal with a cold glass of water. Hope you enjoy the recipe.

Serves 3-4
Prep time 30 minutes
Cook time 40 minutes
Total time 1 hours, 10 minutes

Moist jerk pork chops served with a simple Mango salsa.


  • 2 tablespoons jerk spice (whatever your favor brand. I used the cool runnings brand)
  • 3-4 center cup pork loin chops
  • 1 Large mango (diced)
  • 1/2 Small red onion (more if you love onions)
  • 1/4 scotch bonnet (more if you like spicy food.)
  • 1 Large red/yellow bell pepper (diced)
  • handful cherry tomatoes (halved)
  • 1 teaspoon fresh lime and lemon juice
  • handful cilantro (chopped)
  • 1 tablespoon olive oil
  • salt to taste


Step 1 Place the pork chops in a tray and rub a generous amount of the spice rub all over the pork chops. Drizzle with olive oil and allow marinate for a minimum of 30 minutes. More if you have a lot of time.
Step 2 Place in an oven of 350 degrees for 30-40 minutes or until the pork chops is cooked in the middle. Serve with mango salsa.
Step 3 For the salsa, chop or dice all the ingredients and add to a bowl. Add salt to taste and tablespoon of olive oil. Mix until thoroughly combined. Place in the fridge until ready to serve.

    Yum. I shall try out. But without the salsa. I dunno, fruit and meat never gelled for me in my head.
