Sometime last year (as always) I decided I needed to start eating healthy again. One of the things I quickly missed when I switched up my diet was good ol Vegetable soup. You know efo with all kinds of meat that when you put a fork, you grab at least one! I sought out to find a way to make a healthier version without palm-oil. After a few tries, this was my favorite version. The use of my homemade chicken stock and a good brand of tomato puree, created an amazing taste that reminded me of regular efo. Try it! I tried the efo a few different ways, I think my fave has to be the day I ate it with plantain! It was awesome!
