I don’t know about you but I get tired of cooking and eating the same meals over and over again! I also love to find recipes that are delicious and take less than an hour to make. With the way life happens in North America, it is imperative for me to find ways to spend less time in the kitchen so I can be productive in other areas of my life. especially on weeknights! Today’s recipe is a super quick dinner that took me 45 minutes to make(because I was filming for snapchat -lohio) on a good day it should take less time.  Pork is such good white meat -minus the fats and it does taste really good. This dinner was made with coconut rice that cooked while I was making the pork ribs. Sweet and sour pork

Cook time 30 minutes
Total time 40 minutes
This simple recipe for sweet and sour pork will make your weeknight dinners simple but exciting.

Ingredients

  • 1lb pork ribs (cut into 1 inch bites)
  • 2 cups stock or water (if using water, seasoning with salt and pepper)
  • 1 Large green, yellow, red bell pepper (chopped)
  • 1 Medium sweet onion (chopped)
  • 1 spring onion (chopped)
  • 2 tablespoons thick soy sauce
  • 1/2 cup sambal olek (chilli paste)
  • 1/2 cup sweet chilli sauce
  • 4 tablespoons vegetable oil
  • 1/2 teaspoon cornstarch
  • salt and pepper to taste

Directions

Step 1 clean the prok ribs of any excess fat. Place in a clean pot and cover with stock or water(season if using water) cover and boil for 15-20 minutes or until meat is tender.
Step 2 Once meat is tender, drain in a colander and place back inside a clean pot. Add the soy sauce and stir until it has coated the meats. set aside.
Step 3 In a wok or frying pan, add vegetable oil. once hot, add ginger and garlic paste. Add onions and chopped bell peppers and carrots(optional) fry until the vegetables are soft. remove from pan and set aside.
Step 4 Add a little bit more vegetable oil to the pan. Add sambal olek and sweet chilli sauce. If it is too think use some stock or water to loosen. Add cornstarch. and stir until evenly incorporated. cook for 5-7 minutes or until reduced by half.
Step 5 Add the pork ribs and stir and the vegetables as well. Stir until everything is coated in the sauce. Serve with white rice or coconut rice.

Note

  • You can substitute the pork for chicken or even beef if you prefer those
  • you can add other vegetables you love like mushrooms, carrots, sweet potatoes. etc.
