I am totally loving my Cravings cookbook from Chrissy Tiegen! One of my favourite things about cookbooks is how they inspire me to cook things that I have either forgotten about or things I never thought to make on my own. In the case of this fish, its the latter. A few years ago I used to grill a lot of fish for myself. I would grill fish, eat it with garri and have enjoy finding my way through the bones! Along the line, I got tired of fish and I have not grilled fish in a while! That was until Monday when I went to my favourite grocery store (Hi Fortinos) and I saw croaker fish as one of the options! I was so excited, I bought two! I got home and was looking for a recipe to do justice to this fish and got inspiration from my girl Chrissy! I used her inspiration and made one of the most delicious fish dish I have ever made! It was all parts delicious and healthy so I was very happy! I made some fried yams for my husbands dinner and he loved every  aspect of it. I cannot wait to get some more fish this weekend. I have a fish curry dish planned! Ingredients

  • 2 Medium croaker fish abut 1 pound in weight (any fish can be subbed)
  • 1 Large lemon (cut into circles)
  • 1 bunch fresh herbs (i used, rosemary, basil, chives and parsley.)
  • 1/4 cup oil
  • 3 Large garlic gloves (minced)
  • 1 tablespoon chilli paste
  • salt and pepper to taste

Directions

Step 1 In a bowl combine the vegetable(or olive) oil with chilli paste, garlic cloves and salt and stir till combined.
Step 2 Set oven to 450 degrees to pre heat. Clean the fish and place on a baking tray. (use foil for easy clean up) Using a generous amount of salt and pepper, cover all areas of the fish including the insides.
Step 3 Using the oil and garlic mixture, marinate the entire fish with the mixture and allow to seat for 5-10 minutes to work its way into the fish. Place the cut lemons and fresh herbs into the cavity(cut slit on the side) of the fish.
Step 4 Drizzle some more oil on the fish before putting it in the oven. bake for 20-30 minutes depending on the size and how crunchy you want your fish to be.
Step 5 Serve hot with yam fries and veggies or alone if you are #fitfam
