I love Chrissy and I am loving her new cookbook with each recipe that I make. My husbands birthday was last week Monday and a few friends came over last minute and I decided to make a fish dish just to step away from the norm. I had these salmon with skin on and decided to make them the star of our impromptu dinner. It was very simple and was ready in no-time. This recipe calls for sweet chilli sauce and chilli paste but if you do not want these, you can infuse them with any flavours you really really like. I added a bit of habanero jam that I made to give it that extra kick and it was so so delicious.  Cookbooks would always be one of my favourite ways to get inspiration for new recipes. there is something awesome about flipping pages looking for the next awesome dinner.  Hope you enjoy!

Crispy pan seared salmon

Simple and delicious crispy salmon like you have never had it before with an asian flair.

Ingredients

  • 4 Medium salmon (skin on)
  • 2 tablespoons chilli paste (sambal olek)
  • 2 tablespoons sweet chilli sauce
  • 1/4 teaspoon fish seasoning (I use the cool runnings brand)
  • 1 tablespoon soy sauce
  • 3 tablespoons olive oil
  • salt and pepper to taste

Optional

  • 1 tablespoon habanero jelly ((recipe coming soon))

Directions

Step 1 In a bowl, rinse the fish under cold water and pat until very dry. Cover the fish with the fish seasoning, salt and black pepper to taste.

Step 2 Using a skillet, add the olive oil and allow to get hot. Once hot, place the fish skin side down on the hot oil and it will begin to crisp up. Do not touch for about 3-4 minutes.
Step 3 after approx 4 minutes, turn the fish on the flesh side and cook for 2-3 minutes. Remove from the pan into a flat plate and cover with plastic wrap so it does not dry out or paper towel.
Step 4 Add the soy sauce, sweet chilli sauce, chilli paste and habanero jelly to the pan and cook on medium until it starts to bubble about 2-3minutes. add salt if you think it is needed (i skipped extra salt)
Step 5 Bring the fish back into the pan and cook for 1-2 minutes or until the sauce has properly coated the salmon. Serve immediately with coconut rice or with veggies if you are a member of #fitfam!
