Grilled mini Mackerel

Grilled mini Mackerel

A few weeks ago on my regular weekly shopping haul, I found some mini mackerel fish and I was very excited about the possibilities I quickly grabbed a bag. I got home and put it in my freezer and figured i would find something to do with it in a few days. Unfortunately I had to go to Houston impromptu for a family emergency and so went my dreams of having some mini fried fish with ice cold garri. Thankfully everything went well in Houston and i was back to Toronto a few days later and one of the first things on my mind was to make this fish! I was so excited because while I was away my Blogger-friend 9jafoodie posted a picture of herring fish that she grilled and I got my inspiration from there.

I have a seasoning mix that I put together for fish dishes so all I did was pour that over the fish. Leave it to marinate for about an hour. All I added extra was some ground pepper because I wanted the fish to have a spicy note.  I threw in some lemon into the mix and some fresh parsley and the fish came out so so good! I fried plantains for my husbands dinner and baked some sweet potatoes for myself because fitfam. This dinner was truly delicious! I was so happy with how everything turned out. I had some stew on the side as well and the next day for lunch I had the fish with some sautéed spinach. Its as all so divine! I hope you enjoy this recipe and try it soon!
