One of the fastest meals I make for lunch on a busy day is chicken suya. Chicken breast is one of the fastest cooking proteins and is an easy way to ensure you are eating a proper meal even though you have very little time to put it together. I work at a restaurant and sometimes it gets very challenging having to eat “healthy” with all the other food around. One way I have found to curb my appetite and stay on track for my health goals is to make sure I have a salad and chicken or beef always ready to eat. Sometimes I eat the chicken alone, or I make it into a wrap with whole wheat tortilla bread. Some days are not so easy and I end up making myself some unhealthy lunch full of bad oils and fats but luckily those days are becoming far in between.

Chicken suya is so simple to make. I normally marinate it with a bit of salt. suya seasoning, maggi and onion powder. I drizzle some olive oil on it and allow it to rest for about 30 mins to an hour. If I am in a hurry however, I immediately toss it on my grill and in less than 15 minutes I have a delicious lunch.  Enjoy the recipe below and let me know how you like your suya.

Ingredients

  • 2lb chicken breast (cut into medium sized chunks)
  • 2 tablespoons suya seasoning (buy from your favorite suya guys in Nigeria or from local African grocery store)
  • 1/4 teaspoon pepper (if you like spicy food)
  • 1/4 teaspoon onion powder
  • salt to taste
  • 1 Maggi if you cannot cook without it.
  • olive oil

Directions

Step 1 In a clean bowl, add the chicken and all the ingredients. Toss well till they are fully combined and every chicken is properly covered.
Step 2 Rest for at least an hour and place the chicken on skewers.(soak skewers in water for 30 minutes to prevent them from burning) Bake in an oven at 350 for 15 minutes on each side until golden brown. If you have a grill, grill for 7 minutes on each side or until cooked. Basting with excess marinade liquid at intervals to ensure the chicken remains moist.
Step 3 Serve with onions and extra suya pepper for garnish. Serve with a salad, jrice, cold garri on a hot day, or anything you really love.
